The Margalet is a cheese from the Midi-Pyrénées region in France and more specifically the department of Aveyron in the Causses. It is a great French specialty!
Margalet is produced with ewe’s milk that is characterized by a rugged natural rind. Its color ranges from ivory to orange depending on maturation time, which is a minimum of 18 days.

Margalet cheese brings together tradition and innovation. It is a creation of the Papillon cheese dairies, silver medalist at the Concours General Agricole in 2007.
