La Feuille du Limousin is a goat’s milk cheese made from raw and whole milk. It was created in the 1990s by farmers who are passionate about the Limousin region, in an effort to protect their cheese production. They have created a cheese common to all cheesemakers and its quality is ensured by a regional label.
The cheese is in the shape of a chestnut leaf, which is the symbol of the Limousin region. Its production extends over the Corrèze, the Creuse and the Haute-Vienne areas. Today, it brings together 12 farmers in all three regions.
Texture: creamy
Flavor: slightly salted and a hint of chalkiness
Taste: marked goat taste without being strong or spicy
