Camembert de Normandie is an AOC product.

To help develop the flavor of the cheese, it is ladled from raw milk by hand, so as not to break the curd which prefers a slow drip. Camembert combines a slightly salty flavor associated with sweetness from the milk, and has an 11 cm diameter cylinder adorned with a beautiful white rind.
