Cantal : Jeune, Entre-deux, Vieux ?

A minimum of one month of maturing time is necessary for the cheese to be considered Cantal.

Cantal Jeune: aged 1 to 2 months, has a milky taste, very soft, sometimes with a hint of hazelnut or vanilla

Cantal Entre-Deux: aged 3 to 6 months, has a stronger character

Cantal Vieux: aged beyond 6 months, has almost an animal aroma which is peppery and spicy

Its texture: Soft to firm depending on how long it is aged

Its flavor: Milky aroma and nutty flavor
