Cheese ramequin or mushroom quiche with Swiss gruyere


Ingredients for a savory pie for 6 people, 30 cm in diametere

  • 300 gr grated Swiss cheese

  • 2 dl sour cream (at least 30% fat)

  • 2 dl milk

  • 3 eggs

  • Salt and pepper


Recipe for the pastry dough:

350 gr flour

175g salted butter (like that I'm sure my dough is just perfectly salted)

1 egg

In a bowl add all ingredients and mix with fingertips, add 1-2 tablespoon of ice water (but no more so that the dough does not get to tough) to create a nice ball of dough.

Refrigerate for an hour, wrapped in plastic wrap.

Remove it from the refrigerator and leave it out for 15 minutes before working with it.

Roll out on a floured surface and line your tart pan, prick dough with a fork.

Chill for 15 minutes.

Preheat oven to 220 ° C 

In a bowl, mix eggs, cream and milk, salt and pepper.

Spread the grated cheese on the pie shell, cover with preparation. Bake for 30 to 35 minutes. 

Serve with a salad.
