It is an uncooked pressed cheese made from raw or thermized cow's milk. Its fat content is 28%. It has a slight resin smell and a slightly tart, nutty flavor. It is used to prepare the half-half fondue and Fribourg fondue.
The cheese makers from Fribourg combine traditional know-how with the love of the profession. In their village boilers, they process milk daily from surrounding farms, a raw material of great quality, rich and fragrant.
