Oyster mushroom rice pudding with old Laguiole AOP


Ingredients :
(serves 5)

  • 250g Laguiole old AOP Old

  • 1 onion

  • 1 garlic

  • 110g round grain rice

  • 60g butter

  • 0.2L cream

  • 20 cl milk

  • 200g oyster mushrooms

  • 2 egg yolk


Sauté mushrooms then drain. Put the rice in a pan with cold water, bring to a simmer, then drain.

Finely chop the onion, fry with butter in the pan, add the rice, pour the milk mixture and 15 cl cold cream, butter, salt, add the garlic, bouquet garni and a round shape baking paper, bake in the oven, covered,

Finely cut the old into chips.

When cooked bind an egg yolk with 1 dl of cream, serve hot, top with the Laguiole chips.
