Cantal : Jeune, Entre-deux, Vieux ?

A minimum of one month of maturing time is necessary for the cheese to be considered Cantal.

Cantal Jeune: aged 30 - 60 days, has a milky taste, very soft, sometimes with a hint of hazelnut or vanilla

Cantal Entre-Deux: aged 90 à 210 days, has a stronger character

Cantal Vieux: aged beyond 240 days, has almost an animal aroma which is peppery and spicy

Its texture: Soft to firm depending on how long it is aged
