Born in the heart of Bray, the Neufchatel is the oldest cheese of Normandy.
Coeur de Neufchatel is made in the artisan way and can take many forms, the most widespread being the original and surprising heart shape. Its texture and taste is similar to its well-known cousin, Camembert.

The story goes that the young women of Neufchâtel-en-Bray offered this cheese to their gallant knights during the Hundred Year War. The monks preferred to say that it represented the wings of an angel. This is a broad subject of contention but also of love daydreaming.
Once the milk turns to curd, the dough is kneaded; then it is molded and salted, and placed on stainless trays and taken into a ripening room in order to bloom.
