Buche de chèvre

This big goat cheese with a bloomy rind, and in the shape of a log, is usually produced in dairy. It can be made anywhere in France, but most of its production is concentrated in Poitou-Charentes.

Covered with a thick white fuzzy crust, smooth or streaked, the paste is also very white, smooth and dense with a creamy ivory layer under the rind

This cheese has a strong goat taste, it is creamy and the rind is crunchy. Its taste is fresh and slightly sour in the center. Maybe slightly spicy on the surface.
